Rust-red in colour and with a unique smoky flavour, Pimentón de La Vera, or smoked paprika, is a versatile condiment used in countless Spanish recipes. Made from freshly picked peppers and smoked for 15 days in holm oak wood, this paprika is mild and has an intense smoky flavour. It is this intense smoky flavour that sets it apart from the bland paprika found in most grocery shops.
Smoked paprika is a key ingredient in authentic paella. Beyond paella, it is an excellent spice for seasoning potatoes, stews and sauces. The intense, smoky flavour of sweet smoked paprika is also ideal with grilled meats, poultry or fish.
The peppers used to produce La Dalia Pimentón de la Vera are hand-picked each year in early autumn. Immediately after harvesting, the peppers are sent to wooden smokehouses filled with holm oak wood smoke. For 15 days, the peppers are dried in this intense smoke. Once dried, La Dalia grinds the peppers in traditional granite mills, resulting in a silky, rust-red paprika with a deep, smoky flavour.
