The Cava Barus is a unique cheese, only possible to get in the Garcia Baquero cellars (Cavas), under the watchful eye of their master tuner who pampers and controls the temperature and humidity to achieve those exceptional nuances. Its taste of Mediterranean fruits with caramel marks and a slight spiciness will not leave you indifferent, you have to try it!
Appearance: It has a straw-white colour with a semi-matt surface. Presence of numerous small eyes of mechanical and fermentation origin. Aroma: Its aroma reminds us of freshly milked raw milk. Intense, deep and warm. Taste: Mediterranean fruit flavours stand out with roasted and caramelised marks typical of sheep’s milk ripening. Texture: Unctuous, but consistent and resistant to cutting.

Made with thermised cow's milk (60% min.), sheep's milk (12.5% min.) and goat's milk (12.5% min.), lactic ferments (milk), rennet, salt and calcium chloride.

Open 20 minutes before consumption and leave it at room temperature to highlight and enhance its aroma and flavour.
