This is a smoked cow's milk cheese typical of Cantabria. It is made by the La Pasiega de Peña Pelada cheese factory, which has been open since 1917. This cheese, smoked with beech wood, has a mild smoky flavour that increases with the aftertaste without being very intense.
Made with pasteurised cow's milk from Cantabria, it is pressed and cylindrical in shape. It stands out for having a yellowish-ochre rind due to its smoking, which is done naturally with beech wood, thus acquiring the typical smell and flavour of smoking. It is a cheese with a marked flavour, ideal both for boards and for preparing recipes, as it has a very fine texture on the palate and melts very well.
The rind is thin, soft and waxy. The cheese has a compact, closed paste with no holes. Mild smoky flavour that increases in the aftertaste without being very intense, even so. Toasted flavours. Lactic smell of low intensity and smoky smell of medium intensity. Rind colour is orangey-brown, toasted. Paste colour is yellowish-white in colour. It has a soft texture, somewhat sticky on the palate, its particles are fine-grained, fatty, melting, soluble.
