This cheese is made at the Finca Pascualete cheese factory in Trujillo, in Caceres.. Finca Pascualete is a family business whose origins date back to the early years of the 13th century.
Its production is inspired by the traditional recipe from Tuscany, which was brought to Extremadura by transhumant shepherds, and to which the exquisite black truffle, also Italian, has been added, making Pastura an exquisite and unique cheese.
Its white, tender, mouldy rind holds a delicate, creamy but compact paste, sprinkled with bits of truffle. Its flavour is very balanced and in the mouth it contrasts the sweet flavours of the paste, the earthy aroma of the rind and the delicate flavour of the truffle.
The flock of sheep of this Extremaduran cheese factory, with a long family tradition, graze every day among forests of holm oaks, cork oaks and a multitude of native species such as rockrose and thyme, which provide the livestock with a completely natural diet and which is reflected in the flavour of its cheeses.
