Aromatic olives ‘trencada’ (broken / split) style. This means that the olives are pounded with a hammer until they are split open and pickled in brine with herbs, garlic and hot peppers.
Trencades olives are crunchier than other olives and spicier due to the shorter pickling time. These olives have a bitter salty taste and go well with hearty tapas or red wine.
Depending on taste, the salt water can be replaced after 4-6 weeks with clean, fresh water, which is changed daily to achieve a milder flavour each day.
The origins of Olives Rosselló date back to 1954 in Llubí, Mallorca. The couple formed by Joan Rosselló and Magdalena Perelló began to buy capers that were harvested in the municipality of Llubí and Campos. They made them in an artisan way to sell them in the main markets of the Balearic Islands, especially the Santa Catalina and Olivar markets in Palma.
