    Aged (Gran Reserva) Zamorano cheese, with DOP appellation of origin status since 1993, is made from the milk of the 'autochthonous' sheep of the 'Churra and Castellano' breeds. 

    With a brown rind, inside this cheese has an ivory yellow colour. Its smell is strong, characteristic of sheep's cheese, with a well-developed, spicy and persistent flavour. Its texture is compact, firm and enveloping.

    It offers evolved lactic aromas of toasted butter, hay and nuts. It has a firm, tender, doughy and crumbly texture with an intense, slightly acidic flavour and a slightly astringent and spicy touch in the most mature pieces.
