Montbrú´s Novell is a soft-paste goat cheese with white mouldy skin and a very soft, creamy and tasty interior texture with a hint of butter and a slightly acidic flavour.
The skin, with natural moulds, can be eaten and resembles a fresh mushroom: mushroom, gargoyle ... This cheese becomes softer and more intense the longer it passes and, therefore, the longer it takes to eat it, the more powerful it will be.
