Mercadal´s Mahón-Menorca DOP cheese is made from pasteurised milk from Frisona Menorquina cows. Since ancient times, its traditional square shape is the result of pressing and draining the curd in a cloth called a Fogasser.
The rind of this cheese is orange, compact and smooth, and its interior is off-white in the soft cheeses, yellowish ivory. It contains small, more or less rounded, irregularly distributed eyes.
Matured for 2 to 5 months at a controlled temperature and humidity in the drying room. The cheese is firm and easy to cut. With a more evolved dairy flavour and aromas, reminiscent of butter, cut grass and toasted nuts.

Pasteurised cow's milk, calcium chloride, rennet extract, preservative E-1150 (EGG lysozyme), lactic ferments and salt. Inedible rind, preservatives (E-200, E-235) and colouring (E-172).

A Mahón-Menorca cheese can be kept in the less cold part of the refrigerator, ideally below 10º C, wrapped in plastic film or covered with a damp cloth, thus preventing them from drying out too much.
The optimum temperature for consumption should be between 18º and 20º C, and it is therefore recommended to take it out of the fridge 30 minutes before consumption.
