Mas Rovira's goat's cheese with walnuts is a soft paste pasteurised goat's milk cheese with enzymatic coagulation to which new crushed natural nuts are added, which are incorporated directly into the vat during the production process.
This cheese ages for a month in the cellars of the cheese factory located in Sora, Osona, Barcelona. During this time the cheese develops a natural brown rind on which the small splashes produced by the walnuts are visible. The cheese is ivory-white in colour, with a fine texture and a dense, compact, homogeneous interior in which the small pieces of brown walnuts stand out clearly against the surface of the much lighter-coloured cheese.
It has a pleasant lactic taste at the beginning, not excessively goaty, with notes of nuts and mushroom that will intensify as time goes by. It is creamy and sweet as it matures, acquiring a stronger character with a final nutty aftertaste that lingers on the palate for a long time, always pleasant. The smell is lactic and aromatic with a variable intensity depending on the degree of ripening, a forest scent.
On the palate you can taste the mixed nuts, it really is a good pairing.
