Ibores cheese is one of the most emblematic products of Extremadura. As we know it today, it has been produced in the geographical area of the Protected Designation of Origin (DOP) since ancient times.
It is a fatty cheese, with a smooth, semi-hard, peppery rind and an ivory-coloured interior.

For optimum conservation, Ibores cheese should ideally be stored between 8º and 13ºC.
It is also advisable to wrap it in thin transparent plastic to prevent it from drying out, but not too tightly to avoid the formation of mould on the surface.
For best consumption, it is recommended to take it out of the cold store 1 or 2 hours before consumption, so that it can be tempered, thus favouring its organoleptic characteristics.
