Only with 100% sheep's milk from the best herds, truffle is added from the beginning of its production and so they coexist together throughout its maturation, providing an unmistakable aroma and flavour, respecting the essence of Castilian sheep's milk cheese.
This Castellano cheese is made according to a family recipe with 100% raw sheep's milk. It has an intense smell of truffled oil and sheep's milk, not unpleasant at all. Highly intense aromas in the mouth of the animal family, of sheep with hints of raw nuts, hazelnuts, almonds... A slightly salty, slightly acidic and intense flavour that combines perfectly with the truffle. Mild spiciness that appears together with a pleasant residual taste of high intensity of sheep's milk. Highly persistent flavour in the mouth. Tactile sensation in the mouth: grainy, buttery and oily on the palate. When cut, it is yellowish in colour with few but large eyes. Truffle threads are also visible.
