    Nevat is a delicious creamy and rich soft goat’s cheese from the Catalonian Maresme region of Spain. The word "Nevat" means"snowy" in Catalan, and reflects the color of the cheese which comes from the white, bloomy mould that is found on the rind.  This cheese was created by Josep Cuixart, who opened the cheese factory Formatges Can Pujol in 1980. 

    It is produced from pasteurised milk of Murcia and Grenadine goats. The vegetation in the mountainous region of Vilassar de Dalt, Barcelona, near the Mediterranean coast includes rosemary and thyme which grow wild in the area and are a part of the goat’s diet. These flavours can then be found in the goat’s milk and then transfer to the cheese as well.

    Cylindrical shape, with the upper face slightly convex. Bark white and flowery, velvety, regular and continuous.  The cut has an ivory appearance, with a defined ring under the bark, and a cohesive and moist paste. The smell is of medium intensity, wood and moisture predominate, with notes of goat's milk and grass, or mushroom and natural cava depending on the time of year. Its passage in the mouth allows you to notice a soft and unctuous texture, cohesive, leaving acidic and animal sensations, of medium intensity, of raw nuts, with a predominance of a pleasant bitterness in the aroma and aftertaste.

    Cheese of personal taste, defined, balanced between the primary sensations (acidity, milk) and those derived from a maturation appropriate to the time of maturation (bitter, unctuous texture), with a medium intensity, which prolongs the taste in the mouth.
