Artisan pasteurised sheep´s cheese with mild flavour, compact texture, slightly salty and intense white inside, with a covering of aromatic herbs.
It is made by La Cleda cheese factory in Canovelles (Barcelona) by Dolores Calmet and Jordi Pujades. They have their own flock of Assaf sheeps.
Cheese without rind but with an herbal wrapper, sweet and for everyone. It has a slight touch of pine forest acidity, an aftertaste of freshly harvested cereals, halfway between the freshness of spring and the heat of the sun that is already toasting the grass.
